Orange drop scones

Ingredients:
  • 225g/8oz self raising flour
  • 25g/1oz caster sugar
  • 2 oranges, grated rind of
  • 50g/2oz raisins
  • 2 x tbsp whole milk
  • 1 medium egg, whisked
  • 200ml Bottle Fortisip Orange
  • 2 x tbsp light and mild olive oil for frying

To serve

  • 4 x tbsp maple syrup
  • 110g/4oz full fat natural yogurt

Servings: 4

Preparation:

  1. Whisk the liquid ingredients together.
  2. Place all the dry ingredients into a medium sized bowl, gradually beat in liquid ingredients to make a stiff batter.
  3. Add a tablespoon of oil to a non-stick pan and gently heat.
  4. Drop tablespoonfuls of mixture onto the heated pan.
  5. Cook for 1 to 2 minutes on each side until lightly browned.
  6. Re-oil pan between batches.
  7. Serve drizzled with maple syrup and a spoonful of thick natural yogurt.
